Ingredients:
2 cups of whole wheat flour, sifted
1 1/2 cup Raw sugar
2 cups semi-sweet chocolate chips, cold
1 1/2 teaspoons cinnamon
2 tablespoons strong coffee
2 sticks butter (room temp)
2 eggs (room temp)
1 1/2 teaspoon vanilla
1 teaspoon baking powder
Method:
Step 1 – In a bowl, beat eggs, sugar, butter, coffee and vanilla
Step 2 – In another bowl sift together flour, baking powder, cinnamon and salt. Pour into moist mixture and fold well until blended. Add cold chocolate chips, mix well. Let rest 10 minutes.
Step 3 – Place in refrigerator until chilled.
Step 4 – Preheat oven to 350 F.
Step 5 – Arrange by a level size 40, 3/4 oz. capacity disher (small ice cream scoop) onto ungreased cookie sheet, lined with parchment paper, about two-inches apart, press tops down even with a cold table-spoon.
Step 6 – Bake for 8 to 12 minutes until the edges are browned.
Step 7 – Cool on rack. Makes about 25 cookies.
