Zucchini Bread

3 eggs                                                                     1 tbsp baking power

1.5 cup brown sugar                                           .5 tsp. salt

1 cup vegetable oil                                               1 tsp. cinnamon

1.5 cup whole wheat flour 2 cup shredded zucchini

1.5 cup unbleached flour 1 cup raisins



1 cup brown powdered sugar 2 tbsp butter

1/4 tsp. cinnamon 2 tsp. milk




Heat oven to 350 degrees. Grease 13×9 inch pan. In large bowl, beat eggs. Add sugar and oil; beat well. Lightly spoon flour into measuring cup; level off. In bowl, combine whole wheat flour, unbleached flour, baking powder, salt and 1 tsp. cinnamon. Add flour to egg mixture; mix well. Stir in zucchini and raisins. Spread in greased pan. Bake at 350 degree for 40-50 minutes or until toothpick insert comes out clean.
