[Recipe] Spinach Enchiladas

INGREDIENTS

20 oz chopped spinach

1 small onion, finely chopped

1/2 stick butter

4 oz cream cheese

8 oz finely shredded cheddar cheese

2 tsp sea salt

1/2 tsp. parsley

1 tsp. garlic powder

12 whole wheat flour tortillas

 

METHOD

Preheat oven at 350 degrees. In 10-inch skillet, saute` onions in half of the butter. Add spinach and cover until spinach is soft. Drain excess liquid from spinach  mixture and add seasonings and the cream. Mix well, making sure that cream cheese is smooth. Remove from heat. With remaining butter, spread  the tortillas and lightly brown in oven for approximately 4 minutes or until butter melts. take about 2 tbsp of spinach mixture and place in center of tortilla. Sprinkle with 1 tbsp cheese, roll and place in deep baking dish with the fold down. Roll all tortillas and bake at 350 degrees for about 20 minutes. Optional: Cheese may be melted on top of tortillas if desired.
