Navy Bean Oatmeal Chocolate Chip Cookies

1 c. cooked navy beans

1/2 c. butter

1 c. Raw sugar

1 c. brown sugar

2 c. all-purpose flour (unbleached)

2 eggs

1 tsp. vanilla

1 tsp. baking powder

1 tsp. baking soda

1 c. chocolate chips

1 tsp. salt

2 cups quick-cooking oatmeal




Drain cooked bean, puree in food processor until a thick paste is formed. Measure 1 cup of bean puree and cream with butter and sugar in mixer. Add eggs and vanilla. Blend well. Add all other ingredients. Combine thoroughly. Drop rounded tbsp of dough onto a greased cookie sheet. Bake at 375 degrees F for 16 minutes or until golden brown.
